Calling All Casserole Recipes


Hi Blogworld!
I've been assigned to bring A and her husband dinner on Tuesday night and I need your help. Please post your favorite "new Mom" casserole/meal recipe in the comment section.

Here's one for King Ranch Chicken Casserole - it's a Texas classic and total comfort food! (Also totally unhealthy, but hey, it's a casserole :))

You can find Ro-Tel some places up here (my coworker got it in Jersey for me, where it's much cheaper), like Morton Williams on Bleecker and La Guardia (on the "Hispanic" shelf in the freezer aisle) (no, it's not frozen, that store's layout's just weird!), or you can just throw in some diced tomatoes, a little bit of hot sauce and some extra green chiles!

Barefoot Contessa Turkey Lasagna, you can find it on foodnetwork.com. Just use all sweet turkey sausage instead of 1/2hot, 1/2 sweet (unless you think they'll like it super spicy). Trust me, it is amazing, and just gets better re-heated.

Hey there -- here's a recipe that is very yummy!
CHICKEN ENCHILADAS
(serves 4-6)

2 cups shredded lowfat
Monterey Jack cheese (divided)
1 can (19 oz) red enchilada sauce
1 can (4 oz) chopped green chiles
1 cup lowfat sour cream
1 tsp. sugar
1/2 tsp ground cumin
4 cups (approx) of cooked
shredded chicken (from one pre-roasted chicken)
10-12 lowfat flour tortillas (8" or 9")

Heat oven to 400. In a large bowl, combine 1 cup cheese,
½ can of enchilada sauce, all green chiles, ½ cup sour cream, sugar and cumin. Stir in cooked chicken.

Lightly spray 13" x 9" baking dish with nonstick fat-free cooking spray. Place one tortilla on a clean work surface. Spread 1/3 cup filling along center, gently roll and please seam-side down In dish. Repeat until all ingredients are gone (10-12 tortillas). Evenly spread the remaining enchilada sauce over the enchiladas, dot with remaining sour cream and sprinkle remaining 1 cup of cheese over the top. Bake in heated oven for 15 min or until the enchiladas are heated thru and bubbling.

Whoa, it seems complicated, but it really isn't! Love your blog.

Paula Deen has a recipe on the Food Network website for Chicken Boudine. It's a great casserole. My sister recently had a baby and it was her favorite thing someone brought them to eat!

Here's one for Chicken and Wild Rice Casserole. It'a always a hot and I serve it with peas, which you could also just put in the casserole but my husband likes them on the side.

3-4 chicken breasts
2 boxes of Uncle Ben's Original Wild Rice
1 cup white rice (not instant)
1 can Cream of Mushroom or cream of chicken soup
1 1/2 cans water

In casserole dish put white rice, wild rice (and seasoning packets,
can of soup and water. Mix up until bleanded.
Cut up the chicken into cubes and stir into rice.
Cover with foil
Bake at 350 for 45-60 min.

Hands down, for all new moms, I always make Martha Stewart's Macacroni and Cheese 101. We call it Martha's Marvellous Mac and Cheese. I've made it for many a new mom, it's super. Note - split the recipe into two 9x9 foil pans, and deliver it unbaked. They can heat or freeze and heat at their convenience.

I always take a roasted chicken, which they can eat some of for dinner and then save to pick at or make sandwiches the next day. And if I really like the person, I take them two chickens (if you're roasting one, you might as well roast two). I also include buttermilk garlic mashed potatoes (easy to reheat), and green vegetable, and a green salad (with balsamic vineagrette [see my blog for recipe] bottled separately). I know it's not a casserole, but it's a good gas-free menu, which is really important for a nursing mom (I almost killed my daughter with lentil soup!).

And then something for dessert. People have really liked homemade cookie dough rolled into logs and then wrapped in waxed paper so they can bake them and have them fresh when they want (or just eat the dough).

Nice of you to do this for them!
